The showcase is the work of Executive Chef Hassana El Baroudi, who framed the whole thing around the restaurant's name. A mosaic, after all, is lots of small pieces making one bigger picture — and Lebanese food works the same way, with every region, village and family kitchen contributing its own flavours and techniques. Every item needs its own ingredients, timing and technique, and the kitchen had to hold onto the authenticity that defines Lebanese cooking while coordinating on a scale most restaurants never touch. El Baroudi says the point was storytelling: a decade of Mosaic in the capital told through the culinary diversity of Lebanon itself.

Mosaic runs two branches in Abu Dhabi. The Muroor branch sits on Al Rumaithi Street at Guardian Towers, open Tuesday to Thursday and Saturday to Monday from 8:30am to 11:30pm, with a later Friday start at 1:15pm.
